Vege-fied Collard Green Burritos

So you like burritos but want the outside to be just as nutritious as the guts? Try using collard greens as your wrap! You’ve probably seen it elsewhere, now being used at a couple of different eateries, and for good reason! If you have collards that are big enough, the tough and tasty leaves can pack in tons of flavour and leave you feeling energized. Here’s what I throw inside a big ol’ leaf for a genius burrito! Or whatever. Wrap-thing. Enjoy! Experiment!20140204_151734photo (98)

1-2 big collard greens

1/2 cup cooked red lentils (I spice mine up with cayenne, cinnamon and garlic!)

1/4 cup cooked barley

1/2 cup steamed and mashed sweet potato

Parsley

1/4 avocado

Whatever sauce you like! I like mustard and hot sauce.. with everything..

Salsa would be awesome!

Very simple. Wash and dry collards, fill with lentils, barley, sweet potato, avocado and parsley. Throw some sauce in there or just dip it in. Genius! Delicious! And so good for you! Hope you like. πŸ™‚
