Spiced Banana Walnut Oats

A rainy morning calls for warm comforting breakfast food. With nutrient dense walnuts and sweet ripe bananas, this hearty oatmeal is more satisfying than an oversweetened mystery muffin and way better for you! It’s super quick to make, but you can also make it ahead to save precious minutes in the morning! Easy to cook while camping as well, perfect for crisp mornings rolling out of a tent!photo (60)

1 ripe banana, sliced

1 or 2 walnuts, crushed

1/2 cup oatmeal

1 cup water

1/2 tbsp. coconut oil

1 tsp cinnamon

1/2 tsp cloves

1 tbsp. ground flax

1 tbsp. pure maple syrup

Heat half sliced banana and coconut oil over medium heat until bananas start to caramelize. Add water, oatmeal and spices. Stir well. Cover and cook for 30 seconds then add flax. Stir well, cover, and continue to cook for about 5 minutes, stirring frequently. Pour into bowl and allow to cool for a couple minutes. Cover with other half of sliced banana, sprinkle on crushed walnuts and pour on maple syrup. Natural delicious goodness!
