Sometimes I just go to bed knowing I’m going to want something cold and refreshing in the morning. This is a way to take oats to a no-cook level, with a little bit of preparation the night before, resulting in a creamy and cold raw oat breakfast bowl. Overnight, the oats and the raisins swell up and become super soft, so don’t worry about hard oats when you wake up. The carrots add awesome texture and the raisins tiny bursts of nutritious sweetness. Initially inspired by the amazing overnight oats recipes over at Oh She Glows, fixing your morning oatmeal this way is an awesome opportunity to incorporate raw energizing foods into your diet, as well as save time in the morning!
1/2 cup oats
1 cup water
1 medium carrot, grated
2 tbsps. raisins
1 tbsp. flax
1/2 scoop your choice of protein powder (can be made without)
1 tbsp. honey or maple syrup (optional)
*It won’t be very sweet, so if you like sweetness, opt for the honey or syrup, or use a protein powder that has a natural sweetener in it!
Simply mix all together in a bowl or container and let sit overnight! When ready to eat, add honey if desired, and a pretty sprinkling of shredded coconut! Enjoy! 🙂
