Rise and shine: Apple Cinnamon Swirl Oats

Kind of like apple pie, but way better for you, is this version of amped up oats. With a generous helping of cinnamon and the perfect amount of honey, you’ll want to make it as a desert as well! photo (41)

1 small apple (any kind) chopped

1 tsp cinnamon, plus more for sprinkling

1/4 tsp powdered ginger

1tsp coconut oil

1 tbsp. flax

1/2 tbsp. shredded coconut

1 tbsp. honey or maple syrup

1/2 cup oats

1 cup water

Heat chopped apple and coconut oil and sauté until apples start to brown. Add water and oats, then cinnamon and ginger. Mix and cover, stirring occasionally to prevent sticking, cook about 6 minutes. Add flax and mix in, then continue to cook for about a minute. Pour into bowl and stir in 1/2 tbsp. honey, then top with remaining honey and shredded coconut, add sprinkling of cinnamon. A comforting and healthy start to your day!
