Unfortunately for photo’s sake, mine is pretty burned on top (I got distracted:S) but I got past that and it was amazing.
1/4 cup spelt flour
1/4 cup oats
1 tsp baking powder
1 tsp cinnamon, plus more for sprinkling
1 tbsp. flax
Chopped mango, as much as you want!
2 tbsp. plain yogurt
1 large carrot, grated
Grate carrot and add to flour, oat and baking powder combination. Stir in cinnamon and flax. Add 3/4 cups water. Will make a runny mixture. Let sit for a minute or two, then pour into pan. Top with mango and yogurt, and honey or maple syrup if you wish! Enjoy!
