What’s for breakfast?

Breakfast is my favorite. As the famed ‘most important meal of the day’, it’s also kind of a ritual, where I can wake up, take my time, make something delicious, read, write, or whatever, and prepare for the day ahead. So here’s a little morning dose of inspiration and hopefully some enticing ideas!

PB & B & J Oats

I’m an insane fan of oats. So don’t be surprised if a lot of oat concoctions appear. They’re good for you, versatile, simple to use and pretty inexpensive. I’ve even carried bags of it around with me in Cambodia and Thailand. This oatmeal is a classic favorite. Peanut Butter and Banana and Jam, a combo that was meant to be, gives you a healthy and tasty start to the day.

1/2 cup oatmeal

1/2 banana

1 tbsp. natural peanut butter

1 tbsp.  jam

1 tsp cinnamon

shredded coconut and hemp hearts to sprinkle (optional)

tsp coconut oil (optional)

Heat sliced banana with coconut oil until the banana starts to get really soft, then add 1 cup water and half cup oats. Stir and cover. Add cinnamon and 1/2 tbsp. peanut butter. Stir and cover. Leave cover on, but check occasionally and stir to make sure its not sticking too much. Cook until desired consistency is achieved, or about 7 minutes. Top with 1/2 tbsp. peanut butter, jam, coconut and hemp hearts. I put a couple berries on mine too!
